Our Story
We want salami the way it's meant to be - natural, local, and hand made in small batches. And when in the San Diego area, come see us at the farmer's markets!

Three things are very important to us:
Local. We are part of a local movement here in San Diego to support and sustain our local growers and farmers. Our sea salt is harvested from the Pacific Ocean. Niman Ranch Pork, a California based pork producer who supports and works with small family farms, is one of our meat sources, as is Brandt Farms beef, a San Diego provider of all natural beef, family owned since the 1945.
Organic. We belong to a COOP at Frontier Natural herbs and spices, to attain the quality spices you can taste. This means we don’t use irradiated spices, just pure, clean organic spices.
Quality. Much like our brewing neighbors, we utilize the best strains of bacteria available. We have a proprietary blend produced by White Labs (a local beer yeast cataloging group), the only live culture available in San Diego. This creates our naturally unique flavor and a more uniform product, so you are satisfied with every
single bite. Knight Salumi is inspected by the USDA.
